    Citrus, Fennel + Avocado Mixed Green Salad

    This is the perfect in between winter and spring salad. It’s perfect because it still has that essence of winter with the citrus, but can get us excited for all the tender spring greens to come.

    This salad is bright and crunchy and the avocado helps it to be filling. Plus the dressing is delish! I don’t have any portions listed below, because you can really add however much you like for your personal salad. Don’t make it complicated!

    Ingredients

    • mixed greens
    • fennel
    • cubed orange (I used cara cara and blood orange because they’re pretty, but any orange citrus will do!)
    • avocado
    • Sir Kensington’s Golden Citrus dressing
    • a dash of olive oil
    • pepper to taste
    • fennel fronds for garnish

    Place all ingredients in a bowl, except the avocado, and toss. Then add the avocado. Garnish with fennel fronds.
